Apple-Maple Crisps with Salted Maple Caramel
Serves: 6
  • 6 1-cup oven proof ramekins
  • 6-8 apples, peeled and sliced thinly
  • ¼ cup maple syrup
  • 1 cup maple sugar, packed
  • 1 cup flour
  • 1 stick butter plus 2 additional tablespoons, chilled and cut into pieces
  • ½ teaspoon cinnamon
  • ½ teaspoon cardamom
  • Pinch salt
  • ½ cup Vermont granola (or quick cook oats)
  • Vanilla or maple ice cream
  • Maple Caramel Sauce (see recipe below)
  • Pinch coarse salt for garnish
  1. Preheat oven to 350 degrees
  2. In a large bowl, toss the apple slices with the maple syrup a a tablespoon of the maple sugar.
  3. In a food processor, pulse the remaining maple sugar, flour, 1 stick butter, cinnamon, cardamom and salt until mixture forms loose clumps.
  4. Place 6 ramekins on a baking sheet. Divide the apples evenly into the ramekins, piling high as the filling will settle as they bake.
  5. Carefully divide the crumble mixture on top of the apple crisps, carefully tapping the ramekins on the counter as you fill them so that the crumble topping distributes well and fills all the gaps.
  6. Top each crisp with a good sprinkling of granola, dot with remaining chilled butter and bake for approx 45 minutes, until apples are soft and topping is golden.
