White Balsamic and Dijon Vinaigrette
Serves: Approx. 1½ cups
This is my favorite, "make with everything" vinaigrette. The white balsamic vinegar has a delicate sweetness and is a nice counterpoint to the sharpness of the Dijon mustard and rice vinegar.
  • ⅓ cup white balsamic vinegar
  • 2 tablespoons rice vinegar
  • 2 tablespoons Dijon mustard
  • 1 clove garlic, bruised (remove garlic before serving)
  • 1 cup olive oil
  • Salt and pepper to taste
  1. Shake up all ingredients in a jar. Take out the garlic clove before using.
