My friend Jean has a particularly fantastic super-power. She can go to a restaurant, have a dish that she loves, and then go home and reconstruct that dish (by memory and without a recipe) to create her own version- à la maison. Sometimes her aim is to recreate a dish as close to the original as possible, and other times she’ll re-work it
into something unique and utterly her own. Usually, I’m asking for the recipe once she’s finally written it down. Her dishes range from elaborate to elegantly simple. This is as simple as can be (4 ingredients and 3 minutes to make) but it’s delicious and you can use it literally in a million ways. A good Vermont cheddar has been swapped out for the traditional Double Gloucester.
- 1½ cups shredded extra sharp white cheddar cheese, shredded
- 1 cup Stilton or other good blue cheese, crumbled
- 4 oz cream cheese
- 2 Tbsp sour cream
- Mix all in food processor and serve with crackers or baguette or veggies for a gluten free appetizer.
